The Sunseeker Resort is looking for multiple career professionals to lead various Chef de Cuisine positions in advance of its Grand Opening this Fall, 2023.
There will be seven (7) free standing signature restaurants – Each location will have their own Chef de Cuisine (more a free-standing outlet Executive Chef) and will report to the Resort Executive Chef Kory Foltz.
The highly anticipated Sunseeker Resort Charlotte Harbor unveils an unforgettable dining collection and innovative beverage program. The resort will feature 20 first of its-kind, wholly owned and branded food, and beverage concepts, which include seven signature restaurants, 11 bars and lounges and a food hall spanning 25,000 square feet. With experience designing over 40 golf courses, Kipp and his team of designing and planning experts are committed to developing championship-quality golf course facilities that create enjoyment and challenge. Candidate Qualifications:
- The position requires leadership and a solid foundation with a la carte and banquet experience in quality kitchens. Team culture is extremely important to the management team.
- The Resort will hire professionals committed to being the best in the business supported by a history of lifelong learning and current culinary trends.
- The Chef de Cuisines will become a part of the resort management team and participate in departmental meetings, etc.
- The CDC is able to delegate, establish procedures for departmental cost control and is an amazing cook.
- He/she will evaluate menus, develop training materials/program, onboard staff, train and deploy through opening.
- In addition, there is an administrative component to the positions.
- This is an opportunity to create a brand, not just open a hotel. What you do now affects the future and there are no limits for growth.
- Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times.

- Anticipated Annual Food Sales $30 MM; Total F&B Sales $55 MM.
- The Resort anticipates a sales mix of 70% A La Carte and 30% banquet.
- There will be 220 Culinary Staff and 165 Stewards supported by a generous labor budget.
- Anticipate (18) Sous Chefs, One to three in each area depending on how many meal periods open. A full-service Bakery and Pastry Department with Executive Pastry Chef. A Banquet Chef, Chief Steward and Purchasing Department.
- The Resort will include (18) Kitchens, Banquet/GM/Main/8 Restaurants/Food Hall/Bakery/etc. New kitchens with new equipment. Jade ranges, Alto Shaam Combis, Hobart dish machines, Pitco fryers, etc. Future plan in place for maintenance and replacement purchases.
- Banquets. Sunseeker Resort will have 26 Private Rooms with a seating capacity from 25 to 1,200. The largest sit-down event will be 1,200 guests.
- The Club operates (12) months annually with year-round – occupancy driven by airline guests. Consistent occupancy for the most part.
- Chef de Cuisines will report to the Executive Sous Chefs and Executive Chef and work closely with the Restaurant General Managers, Catering Sales Team, Finance Team, Procurement Team and Human Resources.
