One of the most exciting golf courses in the nation — Wicker Point Golf Club — is coming to Lake Martin. Members will experience the only Bill Coore and Ben Crenshaw-designed golf course in all of Alabama!

Set adjacent to Wicker Point peninsula along the stunning shores of Lake Martin, Wicker Point Golf Club is a private course that will be defined by serene pine plantations, meandering creeks and spectacular lakefront holes comprising half of the course. The unmatched 18-hole course celebrates the land’s unique beauty, topography and serenity. Wicker Point Golf Club is designed to be the centerpiece of Lake Martin’s newest luxury residential development, The Heritage.

The Heritage will include roughly 240 waterfront homesites and 130 wooded interior lots, with the first release having sold exceptionally well. A key amenity for Heritage homeowners is the Lake Club, a resident-owned facility that will include a fitness center, saline pool, eight tennis courts, and eight pickleball courts as well as a beautiful event lawn, covered pavilions, firepits, waterfront beach area, and community dock complex.

Russell Lands Company – Already has a significant hospitality footprint in the immediate vicinity. They own and operate a boutique grocery store/café/coffee shop, a fine dining restaurant, a casual lakeside restaurant, and Willow Point Golf and Country Club (family-oriented).  In January, they will open a quick-service diner style restaurant. They also have lodging facilities.   Position Specific: The Wicker Point Golf Club’s Executive Chef will lead, appropriately manage and motivate the kitchen staff. The Chef will attract and retain staff, maintain a cooperative relationship with team members, optimize staff productivity, and be a hands-on working chef. The Executive Chef will train staff to use new recipes, cooking techniques and equipment, and oversee cooks performing food preparation. He/she will oversee the delivery of food supplies, prepare special dishes, and supervise overall kitchen operations during all meal periods.

To ensure success the Executive Chef will ensure his/her team delivers high-quality, cost-effective dishes promptly. Top candidates are creative, service-oriented, and level-headed.

The Club will Hire these Candidate Qualifications:

This opening position will require the Executive Chef to serve as WPGC’S ‘Culinary Ambassador,’ maintaining a positive, professional and always approach presence as the face of the brand.

  • Plan and direct food preparation and culinary activities. The Executive Chef needs to have strong culinary skills, exceptional organizational skills with solid team-building, and mentoring skills.
  • Develop new recipes, plan menus and select appropriate plate presentations. Keep up to date on the latest trends and products, however, recognize the need for traditional Club cuisine and member favorites on the menu.
  • Supervise kitchen staff’s activities. Be a skilled communicator, a professional with a personable demeanor and an approachable manner.
  • Establish and monitor performance standards for staff. Evaluate job performance of culinary staff; coach and counsel to ensure staff is on track. Reward and disciplines staff in a fair and appropriate manner.
  • Hire and train kitchen staff. Recruit, train, develop and retain a competent culinary team.
  • The Executive Chef is responsible for administrative tasks. Includes inventories, taking stock of food and equipment supplies, and creating purchase orders for new supplies.
  • Assist Clubhouse Manager with Budget. Help to forecast revenues and define expenses. Arrange for equipment purchases/repairs.
  • Ensure that high standards of sanitation, cleanliness, and safety are maintained throughout all kitchen areas at all times.
  • The Chef solicits food and service feedback. Address member suggestions and concerns. Interact enthusiastically with, and is visible, walk the dining rooms and visit with members and their guests.

Executive Chef Requirements:

  • Culinary school graduate preferred /or equivalent work experience.
  • Five (5) plus years of quality experience, similar type club preferred.
  • Solid cooking foundation with knowledge of food principles, various cuisines and practices.
  • Practices Human Resources Management and adheres to policies.
  • Is proficient in BOH systems, ordering and inventory.
  • Excellent communication skills both verbal and written.
  • Works with a sense of urgency with ability to meet deadlines.
  • Available to work industry hours, weekends, and on public holidays.
  • Is the type of Chef that the team rallies around; former employers would hate to lose him/her.
  • Even temperament and able to handle pressure during intense service times.
  • Interacts well and supports culinary team and front-of-house staff and management.
  • Trustworthy with an excellent work record that reflects dependability and progression.
  • Maintains an upbeat and positive attitude; project an outgoing personality and is approachable.

Will report to Clubhouse Manager and work closely with Assistant Clubhouse Manager, Catering/Events Director, Facilities Maintenance Manager and Housekeeping Manager

Statistics: There is one (1) 25,000 sq. ft. Clubhouse with two (2) Kitchens. The Club will open with 200 members but expects to grow quickly. They are planning to carefully manage that growth, but the demand for memberships and property sales has been beyond expectations thus far. There will be two (2) A La Carte Dining Rooms and two (2) Private Rooms.

Food & Beverage Projections Revenue:

  • FY 2022/2023 — $500,000
  • FY 2023/2024 –$900,000

Anticipated Operating Hours:

  • Tuesday – Sunday, 7:00 a.m. – 9:00 p.m.

Menu Periods:

  • Breakfast, Tuesday – Sunday
  • Lunch/Dinner (combined), Tuesday – Sunday

Menu Expectations (all scratch preparations)

  • Breakfast: Casual, breakfast plates (Southern traditional items, including healthy options).
  • Lunch/Dinner: Casual to upscale selections. (Traditional Golf Club items as well as healthy alternatives. Focus on the freshest of seafood, very high-quality meats. Farm-to-table items. welcomed!! Well thought out preparations and presentations.)
  • Turn house: Traditional; burgers, and more. Grab and go. Creative selections.

A compensation package that will include a competitive base salary and discretionary bonus. Benefits include medical insurance, dental insurance, 401K, vacation, and dining allowance and ACF Conference. Relocation allowance is negotiable.
